Results, Updates and Oddly Tittilated

So if you live in the States and are like most folks you had Monday off.  There was no mail--ie no bills--and no banking and plenty of eating and sports if that's what you were going for your day.  Things started off relatively well.  I woke up, milled around, ate a little bit had an annoying argument with my mother and then spent about 20 minutes on the phone with AT&T to make sure we weren't in danger of running over minutes because Madame Talks A Lot keeps adding new numbers to her QVC/HSN, General Hospital and Y&R recap sessions to her day.  This wouldn't be a big deal unless you know my mother in that she will have the same hour long conversation with two or three different people EVERY weekday.  I was smart enough to add A list (no longer available which is why I'm never changing this cell plan unless we move to a carrier with a similar option) to the plan a few years ago because before that mom was not only using up our allotted minutes but several thousand nights and weekends, mobile to mobile and cutting hard into the rollover minutes.  After assuring myself that adding to the list would likely address the issue at hand I went back to sleep cause insomnia has revisited my life.



I woke up and expected cold but a kitchen full of food.  There was JACK squat in there.  I opted not to be cranky and just went ahead and cooked like I did yesterday since my arm is on the mend.  Last night we had knock off chicken crispers (I'll post that recipe in a second cause they were delicious) and tonight I made burgers and fries in the spirit of the day while watching The Voice.  Tonight's episode was super lackluster.  No one had a moment even though I was very impressed with Michelle and Amber tonight for pulling off tough songs even if it wasn't the best version of the song you'd ever hear.  I did vote online but no one impressed me enough to spend the time voting on the phone so I can't really complain if one of my faves goes home tomorrow.  I mean I will if one of them goes home and Sasha's still there cause yeah she sucks but other than that no harm no foul on who departs tomorrow.

The poll closed and by a narrow margin ombre won over the other options of anything but gray, leave it alone and do something else.  NO ONE seemed to want to see my hair totally gray go figure.  It's one of the things we fight so hard against and after getting carded yet again I'm sure it won't stop anyone from going yeah let me see your id.  I guess that's better than the damn you look old alternative but as my 60 year old mom looks like she could be a slightly older sister I'm not super woried about looking my age.  The only time people pick up on the fact that she's my mom is at doctor's appointments and it just seems that medical people are better at that than others I guess.

I've enjoyed cooking again the last few days even though I was thinking why let the girl on pain killers and antibiotics cook my food was yummy and can't ask for more than that.  And because my new department chair is kind of as ADD as I can be sometimes I know my schedule for the fall and spring and options for the summer.  Super excited about being able to do this and what it will mean for me.  Oh well enough babbling, I'm sure I'm forgetting things cause I start all these great posts in my head and then forget to come back to them and actually write them down.  Hope everyone has a great shortened work week.

Chili's Chicken Crispers
1 egg beaten
1/4 cup whole milk
3/4 chicken broth (recipe said Swanson but first time i used that it was extra salty)
1 1/2 teaspoons salt (I'd use 1 teaspoon unless you like it salty)
1/2 teaspoon black pepper
1 cup self rising flour
1/2 cup all purpose flour
10 chicken breast tenderloins (I used a family pack and just doubled the recipe)

Heat oil in deep fryer or pot deep enough to fry in to 350 degrees. Combine beaten egg, milk, chicken broth, salt and pepper in medium bowl. Whisk in one self rising flour then let batter set for 5 minutes. When oil is ready first coat chicken tenderloins in all purpose flour. Dunk in batter and shake off excess before dropping in oil. Cook 7 to 9 minutes or until golden brown. I cooked closer to 12 minutes just to be safe. Drain on paper towels. Recipe as given makes enough to serve two full size entrees or four appetizers per the book.
